What is Bilona Ghee? How is it different from regular ghee?

At Katori, we believe that health should not be rushed. In a world that moves fast, there is a different charm in things that take their own sweet time. We want our food fast and our results even faster. We want our morning coffee in seconds and our deliveries at our doorstep in minutes. But sometimes the best things take time. There is a special kind of magic in things that are made slowly and patiently simmered with love.

When it comes to desi ghee, we do not just see an ingredient; we see it as a gift of health that has been passed down from generation to generation. It is the golden essence that our grandmothers used to drizzle over our hot rotis with a smile. It is a memory of childhood kitchens and the scent of purity. So, your ghee does not need to be rushed! It deserves the respect of time.
What is Bilona Ghee?
You might see different brands of desi ghee at the store, but not all ghee is made the same way. The word ghee might be on the label, but the story inside the jar is often very different. Most of the brands today make their ghee in factories. They focus on volume and speed. They take the leftover cream from milk, boil it at high speeds using heavy machines, and turn it into ghee in just a few minutes. While this is fast, and while it produces a lot of jars for the supermarket shelves, it loses the soul of the food.
When machines take over, the connection to the source is broken. The high heat used in these factories is harsh. It strips away the delicate nutrients. The ghee loses its natural taste and its deep, soulful aroma. It becomes just another oily product, rather than a sacred fat that heals the body.
Katori Bilona Ghee is different. We do not believe in the shortcut. We call it a “Labor of Love” because we follow an old, traditional process called the Bilona method. This is the method that was used in Indian households for thousands of years before the arrival of big machines.
"Bilona" refers to a wooden churner that our didis use to churn fresh curd. This is a very important distinction. Yes, Katori Bilona ghee starts from curd, not just cream.
Most commercial ghee is "Cream Ghee," made by separating cream from milk and heating it. But Bilona Ghee is "Cultured Ghee." This is the secret to its amazing taste and health benefits. By turning the milk into curd first, we allow healthy bacteria to do their work. This fermentation is what makes the ghee so much easier for your stomach to handle.

- Pure Milk: Everything starts with the source. You cannot make pure ghee from unhappy cows. We start with fresh, healthy A2 milk from cows that are treated with love. These cows graze peacefully and are a part of our extended family. Their milk is rich, creamy, and full of the goodness of nature. We ensure that the milk is as pure as it can be, without any chemicals or hormones.
- Making Curd: This is where the magic of transformation begins. This milk is boiled and then cooled down to the perfect temperature. We then add a bit of starter culture and let it turn into fresh curd overnight. While the world sleeps, the milk is slowly setting, becoming thick and full of natural probiotics. This step is essential because it breaks down the lactose, making the final ghee much more digestible even for those who are sensitive to dairy.
- The Churning (The Actual Bilona): Once the curd is set, it is time for the hard work. We use the wooden Bilona to churn the curd back and forth. This is done in the early hours of the morning. Our didis move the wooden churner with a steady, rhythmic motion. This slowly, very slowly, brings out the butter (makhana). It is a very peaceful and quiet process. Unlike noisy factory machines that vibrate and roar, the wooden Bilona hums. This manual churning ensures that the molecular structure of the fats remains intact and healthy.
- Washing the Butter: Once the butter is separated from the buttermilk, it is collected by hand. We wash this fresh butter with pure water to remove any remaining buttermilk solids. This ensures that when we cook it, the ghee turns out incredibly clear and pure
-
Slow Cooking: This is the final test of patience. That fresh butter is then cooked over a very low fire. We do not use high flames to finish quickly. We watch it carefully for hours as the water evaporates and the milk solids settle at the bottom. We wait for that exact moment when the liquid turns into clear, golden ghee. If you cook it too fast, it burns. If you cook it too little, it stays raw. We wait for the perfect golden hue.
It takes a lot of milk, a lot of love, and a lot of time to make one jar of Bilona ghee. In fact, we use about 25 to 30 litres of cow milk just to make 1 litre of Katori Bilona Ghee. When you see that ratio, you realise why this ghee is so precious. It is the concentrated essence of many litres of pure milkWhy is it Better for You?
At Katori, we do not use high heat or machines, so that the vitamins and minerals stay alive inside the ghee. In factory-made ghee, the high temperatures often kill the nutrients. But because we stay low and slow, the nutrients are preserved. When you eat a spoonful of Katori Ghee, you are giving your body a powerhouse of nourishment:

● Vitamins for Strength and Glow: Katori Bilona Ghee is full of Vitamin A, D, E, and K. These are fat-soluble vitamins, which means your body needs healthy fats to absorb them. These vitamins help your bones stay strong and your skin stay glowing. It is like an internal moisturizer for your body.
● Vision and Protection: Katori Bilona Ghee works wonders for vision. In Ayurveda, it has always been recommended for eye health. It also helps in maintaining the mucosal linings of the body. These linings are your first line of defense against infections and environmental toxins.
● Antioxidant Power: It helps the body absorb calcium and is full of Vitamin E. We often hear about Vitamin E in expensive face creams, but it is even better when it comes from your food. It is a powerful antioxidant that protects your cells from oxidative stress. This is just a fancy way of saying it helps protect your body from aging and internal damage.
● Heart and Bone Health: Katori Bilona ghee is rich in Vitamin K2. This is a very special vitamin that acts like a traffic cop. It helps direct calcium into your bones and teeth where it belongs, rather than letting it build up in your arteries. This keeps your heart healthy and your bones dense.
● Good for Digestion: This is perhaps the most famous benefit. Katori Bilona Ghee has Butyrate (butyric acid). Think of Butyrate as a soft broom. It works like a soft broom and cleans your stomach and helps you digest food better. It nourishes the cells of your intestines and reduces inflammation. If you have a heavy feeling after meals, a little Katori ghee can help everything move smoothly.
● Brain and Heart Health: Our Bilona Ghee has healthy fats like Omega-3 and Omega-6 fatty acids. These are good fats that are essential for your brain. Your brain is mostly made of fat, so it needs high-quality fats to function, stay sharp, and keep your memory strong.
● Immunity for the Whole Family: Katori Bilona Ghee is great for kids and elderly people as it helps in building immunity. It helps the body fight off sickness by strengthening the Ojas or the vital energy of the body. It provides the energy needed to stay active and resilient.
● Helps in Weight Management: It sounds strange to say fat helps with weight, but it is true. Katori Bilona Ghee is rich in Conjugated Linoleic Acid (CLA). CLA has been shown to support the immune system and may help reduce body fat by improving metabolism. It gives you long-lasting energy so you don't crave sugary snacks.
Texture and Aroma: You can tell the quality of ghee just by looking at it and smelling it. Katori’s Bilona Ghee has a beautiful, natural yellow color. It is the color of sunshine. When you open the jar, look closely at the texture. It is not smooth and waxy like butter or factory-made oil. Instead, it has a grainy texture (Danedaar). This grainy texture is a sign of purity and the● slow-cooling process. It shows that the fatty acids have crystallized naturally. And the fragrance? It does not smell like chemicals or artificial flavorings. It smells like a warm kitchen, a flickering flame, and a happy childhood. It is an aroma that fills the whole house when you put it on a hot pan.
In Ayurveda, Bilona ghee is seen as a Sattvic food and a healer. It brings balance to your body and calm to your mind. It is considered a pre-digested fat because of the fermentation process, making it light on the system. It does not just fill your stomach, it makes you feel good from the inside out. It nourishes the deep tissues of your body.
